Menu Plan Monday

Here is my post for Menu Plan Monday. I am trying to get in the habit of linking up my menus every Monday. Our family does not eat eggs, dairy, nuts, or mushrooms due to allergies. I am only including my breakfast and dinner this week because we usually just wing out lunches.

Here are my breakfasts (with fruit):

  • Monday –  Pizza Biscuit Casserole
  • Tuesday – muffins
  • Wednesday – breakfast skillet (onions, bacon, peppers, potatoes)
  • Thursday – oatmeal
  • FridayBaking Powder Biscuits and pepperoni
  • Saturday – pancakes
  • Sunday – pancakes

Here are my dinners for this week (with vegetables):

  • Monday – sausage pie with Biscuit Topping
  • Tuesday – pizza night
  • Wednesday – pasta
  • Thursday – leftovers
  • Friday – roast beef dinner with all the fixings
  • Saturday – chicken
  • Sunday – sausage and mashed potatoes

Pizza Biscuit Casserole

This recipe is egg free and dairy free.

Use this Baking Powder Biscuit recipe.

Ingredients

  • 1 batch of dough (see above)
  • 1 cup pasta sauce (use your favorite)
  • 1 red pepper (chopped)
  • 1 green pepper (chopped)
  • 1/2 cup or one bunch of green onions (chopped)
  • 2 cups sliced pepperoni

For The Pan (9×13 glass rectangle cake pan)

  • cornmeal
  • oil

Directions

Turn oven on to 350. Mix dough following the directions on the Baking Powder Biscuit recipe. Put a small amount of oil on the pan and smear it around with your fingers. Put a small amount of cornmeal on the pan. Press the dough into the pan and press it down. Pour the sauce onto the dough and spread it around evenly. Put all the vegetables on next and spread them around as evenly as possible. Layer the top with pepperoni slices. Place in the oven to cook for 30-45 minutes.

My Notes

My family loved this recipe. It pleasantly fed 4 adults and 5 kids.

Baking Powder Biscuits

This recipe is egg free and dairy free.

Ingredients

  • 4 cups flour
  • 4 tablespoons baking powder
  • 1 tsp salt
  • 1 cup lard
  • 1 1/2 cup water

Directions

Set the oven at 350. Mix the flour, baking powder, salt, and garlic together in a large bowl. Add in lard. Mix until nice and flaky. (I usually do this with my hands). Add in the water. Stir well with a spoon and then knead with your hands. Form into biscuits. Place on cookie. Cook for 15-20 minutes.

My Notes

This recipe, as is, makes 8 large biscuits.

Biscuits and Gravy: Double the recipe and serve with your favorite leftover gravy. Add garlic and your favorite spices to the recipe right after you add the salt.

Biscuits and Pepperoni Slices: Add garlic and spices to the recipe right after you add the salt. Cook the biscuits. Slice them, while hot, and place a slice of pepperoni inside. This would also work well with precooked sausage patties.

Biscuit Topping: This recipe can also be used on top of a potpie. Add garlic and your favorite spices to the recipe right after you add the salt.
