This is my Menu Plan Monday on Tuesday because yesterday we were getting ready for our Easter turkey dinner.
Tuscany Turkey Pasta – Elisha helped me make this one tonight for dinner (he helped cut onions and peppers). We put some water on for elbow noodles. Then we cut up some onions, red and orange peppers, and leftover turkey and put it in the frying pan with some oil. When the pasta was cooked we strained it and combined it all together with the turkey and then added fresh spinach and stirred it all up.
Leek and Turkey Pie – I bought some leeks this week thinking that I might make a leek soup, but I found this fun recipe using leeks and leftover turkey.
Ginger Turkey Stir Fry – When I was grocery shopping, I bought the ingredients to make stir fry and this recipe looked like a good place to start.
Turkey Salad – Now that we have hit spring, it is time to bring back the salad. We will start with this recipe as inspiration.
Cabbage Roll Casserole – I remember having cabbage rolls as a child, but I have never made them myself (someday I will try). I have made a lazy version like this recipe.
Hamburgers and Roasted Rosemary Potatoes – I love roasted potatoes with rosemary and I have been wanting to make them for a long time. Check out this recipe.
