Cabbage Roll Casserole

This is a simple replacement for all those cabbage roll casserole lovers. This time it will be made with breakfast sausage and bear paw hamburgers. I know that sounds really weird, but the plan is to fry those up with some onions and mild salsa. It will create a really yummy sauce to mix with the cabbage and the rice. We use parboiled rice so it doesn't need to be cooked ahead and turns out perfect every time. Okay, I am really looking forward to this meal. 

Beef And Broccoli with Rice

We didn't get to this one last week. I make this with roast that has been cooked, sliced, and frozen. We will cube this up, fry it with onions and broccoli. It will be served with rice. 

Sweet n Sour Pork with Rice

We cooked a pork roast last week that was sliced and frozen. This will be cubed and fried with onions and peppers. Then we make the sauce - brown sugar, ketchup, and vinegar - until it tastes right. So easy. This will be served with rice and veggies. 

Chicken Fingers and Ceasar Salad

This one is easy. Cut up romaine lettuce, add Ceasar dressing. Cook chicken fingers, place on top. You can dress this up with parmesan cheese and crutons if you like. 

Spring Chicken Pie

I love chicken pot pie, but I like to save the heavy meals for the colder days of fall and winter. We are going to try something a little different this week. Grilled chicken breast, onions, peppers, corn, carrots, potatoes (easy on the potatoes), chicken gravy, and a baking powder biscuit crust.

Menu Plan Monday

Menu Plan MondayThis is our first week back to our homeschool after two lazy (but busy) weeks off. I need to keep the meals simple so we can focus on our book work and get out in the yard and get the garden ready for planting.

I am only planning the main meals this week because we have leftovers in the freezer that need to be consumed. These are not in any particular order. I am feeling a wee bit non committal and want to be prepared for whatever surprises the week brings.

  • Beef and Broccoli with Rice

  • Pirogies, Bacon, and Peas
  • Spaghetti and Side Veggies
  • BBQ Chicken with Rice and Veggie Side Dish
  • Daddy's Homemade Pizza

Menu Plan Monday

This week's menu is a bit ambitious and may not all come together as planned, but I am going to give it a good go. Everything will be made from scratch and I am hoping to enlist the kids with some of the baking this week. I can't wait to try out some new recipes and see if they will work for our family.

Wednesday

Breakfast - Muffins with fruit
Lunch - Soup and rolls with veggies
Dinner - Macaroni casserole with veggies

Thursday

Breakfast - Sausage gravy and biscuits with fruit
Lunch - Soup and dinner rolls with veggies
Dinner - Chicken and rice with veggies

Friday

Breakfast - Muffins with fruit
Lunch - Soup and sandwich with veggies
Dinner - Homemade Pizza

Saturday

Breakfast - Pancakes with fruit
Lunch - Pizza biscuits with veggies
Dinner - Chicken pot pie

Sunday

Breakfast - Pancakes with fruit
Lunch - Pizza biscuits with veggies
Dinner - Spaghetti with garlic toast

Monday

Breakfast - Sausage gravy and biscuits with fruit
Lunch - Soup and dinner rolls with veggies
Dinner - Chili with rice and veggies

Menu Plan Monday – Raid The Pantry Week

Since I have been sick we have not made it the grocery store, so it is another week of raid the pantry.

Monday - Hamburger Gravy with Mashed Potatoes and Veggies

Tuesday - Tuna Mac with Peas

Wednesday - Chili with Rice and Veggies

Thursday - Spaghetti

Friday - Brown Beans and Rice with Veggies (the kids love this)

Well, there you have it. Nothing special this week. I hope to be back with a bang next Monday and come up with some fun and exciting menus for next week.

It is menu planning time again. This week is pretty easy because we just did a giant grocery shop on the weekend.

Monday
